An ontology is a set of properties and relationships for each entity type. A predefined ontology helps Diffbot's AI more easily fit the knowledge it finds into the properties and relationships we care about. It also serves to ensure that the properties and relationships of each entity remains consistent with each build of the Knowledge Graph, or even your own database.
